Trystan-Ross Williams

Taking on his first kitchen job at the age of 14 washing pots and pans, Trystan developed a passion that would never quite leave him. Quickly he became involved in other sections of the kitchen settling as a pastry commis. Over the next few years he learnt in local restaurants around his hometown of Romsey.

In 2006, at the age of 18 he enrolled at Birmingham conservatoire studying jazz music where he met Tim. Whilst there he picked up work in cocktail bars but always gravitated back towards the kitchen where he felt most at home.

Upon leaving university he started working in hotels and pubs up and down the country, but the desire to aim high was always there. 

Since then he has plied his trade in michelin starred restaurants, The Sir Charles Napier in Oxfordshire, Restaurant Sat Bains in Nottingham and Murano by Angela Hartnett in London. All the while picking up a respect for high quality produce, low waste cooking and responsible sourcing along the way.
