It started when...

Tim Thornton and Trystan-Ross Williams met studying jazz at Birmingham Conservatoire in 2007. Simply put, Karve is a pop-up during which a ridiculously  good tasting menu is accompanied by live, original jazz. Like a drinks pairing, but with jazz.

Tim Thornton is a multi award-winning jazz bassist. He has travelled worldwide, playing alongside musical greats such as Guy Barker MBE and Julian Bliss and has also supported George Benson. He has released two albums and continues to tour. To hear some of his latest record visit our Music section.

Trystan-Ross Williams is the Head Chef of Hencote, a vineyard and restaurant in Shrewsbury. He has previously worked as Senior Sous Chef at Murano by Angela Hartnett, Michelin-starred The Sir Charles Napier in Oxford and double-starred, Restaurant Sat Bains. Trystan and his team will create a menu reflecting his passion for low-waste cooking whilst using challenging ingredients and incorporating proper pastry work.
